The beautiful hotel estate is embedded in a fairy tale countryside and close to the ancient town of Scansano, a characteristic Tuscan village on the top of a hill in the Alta Maremma that is full of history and culture. Joining you will be the many welcomed guests of the 4 star hotel, Resort di Scansano: a traditional ancient residence in Tuscany recently undergoing restoration turning the property from a characteristic country farm in Tuscany to a luxurious hotel estate. Indeed a fantastic place, immersed in nature, where you can reconcile enviable comfort with an exciting stay on a farm estate in Tuscany.
This is a superb country resort, overlooking the hills of the Maremma region with a riding centre available, endless fields and woods, silvery olive groves and the Morellino di Scansano vineyards which offers its visitors an opportunity to discover the secrets of typical Maremma cuisine.
Learn the secrets of the Tuscan cuisine by participating in a Tuscan cookery course, where you can learn how to prepare homemade pasta, meat specialities and delicious local desserts all of which are authentic Tuscan dishes. During your one-week stay you will attend an informative and fun cooking course which includes three days of cooking practice and food tastings, alternating with three horseback riding days. Both beginners taking their first culinary steps and experts of other types of cuisine will learn the subtle expertise behind the simple yet sophisticated recipes used by Maremma's country cooks to make the best of the fruits of their generous land.
On your three horseback days you ride through the gentle hills, travel along lazy meandering rivers, and explore the small lush forests of the area (about 3 to 4 hrs each ride).
For those that enjoy a good pampering in the spa, we can change the itinerary to include 2 days of riding, 2 days of spa time and 2 days of cooking classes.
Each cooking class will take about three hours to complete.
The first course introduces the favorite Italian soups, the art of making pasta, the sauces and the way in which they are presented.
The second class will show you all the secrets of the main courses - meat with rosemary, the art of cooking and serving more refined dishes as fish, roasted or en casserole chicken, wild pork, lamb, rabbit and you are shown the way in which they are each presented.
The third lesson covers the sweets! Under the guidance of our skilled chef we will bake typical cakes as "tozzetti" (biscuits with nut), jam-tarts, etc.
Your spa treatments will include Holistic Massage, Body Scrub, Furo Treatment and an Ayuvedic Massage.

Saturday: check in - overnight.
Sunday: Ride to the small medieval village of Poggioterro, through woods and meadows on the North-East side of Scansano. Stop for a rest for both riders and horses, then back to the hotel.
Monday: The cooking program provides 3 lessons (3 hrs) Monday-Wednesday-Friday - no riding on those days.
The first day in the kitchen will be dedicated to Italy's pièce de résistance: homemade pasta - tagliatelle, tagliolini, gnocchi, tortelli with a seasonal filling, brigoli and pappardelle. You will prepare these dishes with your own hands under the supervision of an expert, and taste them after the lesson with the right wine: red Morellino di Scansano, white Aione from Macereto, etc.
Tuesday: Breakfast and departure for another beautiful excursion into the Maremma countryside. We ride along old car-roads, going down hill slopes and across torrents where we can see the typical plantation of this area and if we are lucky, meet a wild boar or a fallow-deer searching for food. We then stop for a rest before returning to the hotel.
Wednesday: The cooking course will continue with wonderful country soups, flavored with simple local olive oil. You may prepare mushroom, Mediterranean vegetable, chick pea or bean soups as well as tasty traditional acqua cotta. And the Casale kitchen will reveal the secret of its own Zuppa del Casale. And then sauces - wild boar, spring vegetable, ragù to enhance the different types of pasta. The starters are always fun to prepare, like Tuscan crostini, or simple bruschetta with olive oil, tomatoes, etc.
Thursday: In the morning ride to "Il Marcereto" farm where we produce red (Morelino di Scansano) and white wine, grappa and olive oil. From the horse stables we go along the old road of "Il Salalolo" to reach an old salt mine and then go on hill-slopes, through vineyards and olive groves and up across an old torrent. Stop in the farm to visit the cellar and taste our products.
Friday: To crown it all, on the last day of the cooking course, you will learn how to make traditional desserts like panna cotta with wild berries, tozzetti to serve with vin santo and other little delights, whose secrets will be revealed to you in due course.
On Friday, at lunch time, participants will usually be treated to a special wine tasting session with local white and red wines (most of them out of our own production)
Saturday: after breakfast … good-bye to everybody.

A body scrub with marine thermal salt rich in active ingredients that leave the skin feeling smooth, fresh and ready for further treatments

This massage involves a combination of western and oriental techniques to create a feeling of physical, mental and spiritual harmony.

Furò treatment
Delightful cleansing in a wooden bath with hydromassage, chromatic stimulations, sweet scents and special oils.

Ayurvedic massage
This massage originated in India around 5000 years ago. By using heated vegetable oils, the massage encourages detoxification of the body, relaxes the mind and invigorates the spirit.

The wellness area provides an indoor swimming pool, hydrotherapy bath with Dead Sea salts, whirlpool bath and the “Paradise of the Senses”, a place entirely dedicated to health, with relaxing music and pleasant perfumes. In the “Paradise of the Senses” through bioclimatology and the right quantity of heat, at different temperatures and in distinct rooms, you can get surprising health benefits and a general state of well-being and relaxation. Moreover, the Spa provides a sauna area including calidarium, tepidarium, laconicum and frigidarium.

The regular package includes a standard room with private bath.
Standard double rooms:
 -- placed in the main part of the Hotel and in 2 annexes, they have been recently restored. All rooms have antique furniture and wrought iron beds, to make you live once again the atmosphere of the old country houses in Tuscany. Each room has a private bathroom and all comforts. They have a striking view over the medieval village of Scansano or over the garden of the Hotel Resort.
Double rooms with balcony:
 -- placed at the first floor of the new stone construction, built keeping the style of the old farmhouse, they are ample, bright, with a private entrance from the terrace, which has a romantic, relaxing corner with table and chairs. All rooms have antique furniture and wrought iron beds. Each room has a private bathroom and all comforts. They offer a striking view over the green valleys of Maremma.
