HIGHLANDS DINING ROOM
Our Highlands Dining Room offers sumptuous New American cuisine in the
refined ambiance of a traditional Mountain Lodge. Our new Executive
Chef, Will Hollinger, has created a menu that will elevate the culinary
and dining experience to a level of excellence...with innovative
cuisine using fresh local ingredients. Chef Hollinger's commitment to
the membership in the Vermont Fresh Network ensures that he will
utilize products from Vermont's working landscape. From the Vermont
Onion Soup to the Grilled Vermont Quail Salad to the variety of
vegetables and accouterments from local farms, dining is an
unforgettable experience. To whet your appetite please view a sample of
our Winter menu.

Executive Chef, Will Hollinger, spent his childhood in
Massachusetts between Cape Cod and the western part of the state.
Inspired by his German grandparents, who owned a farm where he learned
to make wine and jelly (among other things!), he spent a great deal of
time with them canning, growing vegetables, making homemade pickles and
sauerkraut. Growing up on Cape Cod he helped in his dad’s garden and
learned early on that the best fish is from Cape Cod...thus his passion
for cooking seafood.
THE HIGHLANDS TAVERN
Dining
Room Manager Jay Kerner, a graduate of New England Culinary Institute,
began his career in Boston and then quickly advanced to the realm of
fine dining with the Bellagio Hotel and Casino and the Four Seasons
Hotel in Las Vegas. Jay has found that his talent for managing the
Dining Room is a natural transition from the kitchen and complements
his interest in all aspects of fine dining management. As a Desert
Storm veteran he also brings a sense of pride and discipline to the
service staff, who work very hard to exceed the guest's expectation,
whether it be by filling a water glass before it is empty or
overhearing that someone is celebrating a special occasion and
magically a cake appears!! As an extension of the culinary expertise,
Jay and his staff work to reflect the same level of commitment
displayed by Executive Chef Hollinger and his "behind the scenes" staff
in the kitchen.
The dinning room hours are as follows:
Breakfast is in the Dinning room from 730-930 weekdays and 730-10 on
weekends. Lunch is always 12-2. Dinner starts at 530 in the tavern and
ends at 930 in the tavern and the Dinning room opens at 6 and closes at
9. The bar will remain open for the whole dinning hours as long as we
have people in it but by law has to shut down at 2am.
Neat casual resort attire. Jackets common in dining room.
For casual bistro fare join us in the The Highlands Tavern,
which offers pub style seating, a full service bar and extensive wine
list, seasonal outdoor seating on the Terrace and spectacular views.

Massage Therapy:
The Resort offers Massage Therapy as a restorative oasis designed with
you in mind. Unwind, relax, de-stress and rejuvenate your skin and body
with our array of massage therapy specialties. All massage services are
customized to meet specific client needs and preferences. All are
enhanced by the sounds of soothing music and flowing fountains. Pure
essential oils are used to create a deeply relaxing experience, which
detoxifies and improves circulation while balancing the mind and body.
Swedish Massage:
The Swedish massage, developed in the 1700's refers to a variety of
techniques specifically designed to relax muscles by applying pressure
to them against deeper muscles and bones, and rubbing in the same
direction as the flow of blood returning to the heart. The main purpose
of the Swedish massage is to increase oxygen flow in the blood and
release toxins from the muscles.
~$90/Hour, ~$135/1.5 Hours
Sports Massage:
This massage technique, specifically designed for athletes, is perfect
to improve performance or to aid in recovery from injury or exertion.
Sports massage improves circulation of blood and lymph fluids while
increasing range of motion. The massage therapist uses techniques
designed to benefit muscles by warming and softening tissue, realigning
muscle fibers and flushing toxins from specific muscles. The sports
massage is the perfect way for an athlete to improve their game or
restore the body to peak performance.
~$90/Hour, ~$135/1.5 Hours
Shiatsu Massage:
Shiatsu massage uses ancient techniques to alleviate physical stress
while invigorating and centering the recipient spiritually. The goal of
shiatsu is to strengthen the receiver's innate healing power by
balancing the flow of ki energy along the meridians. Sometimes referred
to as acupuncture without needles, the massage therapist uses their
fingers to move currents of electromagnetic energy which may have
become blocked throughout the body. The receiver may remain dressed in
loose clothing while the practitioner applies light pressure along
meridian points in accordance with the receiver's breath. Relax your
body and renew your spirit with a shiatsu massage. ~$90/Hour, ~$135/1.5
Hours
Deep Tissue:
Deep tissue massage, also known as Myofascial release or soft tissue
mobilization, is often used to relax, lengthen, and alleviate stress
held in the muscles. The massage therapist uses specific strokes at
varying speeds to apply more intense pressure, stretching muscles and
releasing stored tension. With deep tissue massage, the recipient can
achieve better posture, more flexibility, fluid movement, and
experience reduced pain and stiffness. This classic massage is a simple
luxury to help you relax and escape the real world while you enjoy your
vacation.
~$90/Hour, ~$135/1.5Hours
Hot Stone Massage:
The powerful meta-aesthetic energies of stones are known to promote
harmonizing and cleansing effects on the body, allowing for a
meditative state of quiet and calmness in the recipient. This therapy
combines traditional massage techniques with the therapeutic powers of
heat. Stones serve as thermal conductors bringing about local and
systemic changes in the body. A very effective therapy to create
harmony and a positive energy flow, hot stone massage can also have a
positive influence on the mind/body balance. Our hot stone massage
allows you to de-stress and become one with nature in the most
beautiful of settings.
